President Thomas Jefferson, apparently, loved English peas and planted 15 varieties in his kitchen garden at Monticello.
Jefferson also enjoyed artichokes and 20 kinds of beans. He planted salsify (collected by the Lewis and Clark Expedition), broccoli, cauliflower, eggplant and tomatoes (all then exotic), endive, nasturtiums and a cabbagelike vegetable that he adored called sea kale.
Fast-forward 200 years. And contrast Jefferson's wildly adventurous palate with the average American child's straight and narrow focus. A recent study by Ohio State University showed that 40 percent of the average kid's fruit intake consists of fruit juice; and 25 percent of his or her vegetable intake?
French fries.
